yummy yum yum.

Last night was a total success all because I made this dinner. 4 out of 4 liked it. And its quite hard to get husband to love chicken and bacon, but this did the trick.



Chicken, Bacon & Cream Cheese Taquitos


1 package of bacon, fried and chopped chopped 
4 1/2 oz. cream cheese, at room temperature
6 or more or less chicken tenders 
 8 10-inch flour tortillas
canola oil, for frying

Preheat over to 350 degrease 
In a large skillet, fry the bacon until crisp. Wait until cool and then chop it .  Fry  chicken tenders in bacon grease until golden on the outside.  Place chicken tenders in the oven for about 4-5 min or until no longer pink inside. Let chicken cool and then shred it. Mix Bacon in a bowl with the cream cheese and chicken.  Combine mixture well.

 Fill each tortilla with 4-5 teaspoons of the chicken mixture.  Roll and secure with a toothpick.  Refrigerate taquitos until ready to fry.

Heat the oil in a fryer, or in a dutch oven to 350F.  Fry the taquitos in batches until the tortilla is golden brown, about 3-4 minutes.  Remove to a paper towel lined plate to drain.  Remove toothpicks.

Serve taquitos with Avocado Ranch Guacamole. Diced tomatoes, lettuce and purple onion

Avocado Ranch Guacamole

1 smashed, fresh avocado
1/2 cup mayonnaise
1/2 cup sour cream or cream cheese
1 tablespoon buttermilk
1 1/2 teaspoons white vinegar
1/8 teaspoon salt
1/8 teaspoon dried parsley
1/8 teaspoon onion powder
dash dried dill weed
dash garlic powder
dash pepper

Smash avocado. Combine all ingredients and mix well. Keep refrigerated.
